Rockin' Chicken Enchiladas

I based these enchiladas off this one from bakerette.com. It was an awesome recipe to work from. The girls thought it was great and seconds are being eaten as I type.

Rockin' Chicken Enchiladas

10 medium-size flour tortillas
2 cups shredded chicken (from about 2 breasts)
1 cup shredded sharp cheddar cheese
1 cup shredded monterey jack cheese
1 cup shredded pepper jack cheese
1 cup salsa
1 cup chopped green onions (one bunch as sold in the store)
1/2 teaspoon salt
4 Tablespoons butter
4 Tablespoons flour
2 cups chicken broth
1/2 cup sour cream
1/2 cup mayonnaise

1. Preheat your oven to 350 degrees. Grease a 9x13 pan with cooking spray.
2. Combine all the cheese in a small bowl.
3. Mix the chicken, 1 1/2 cups cheese, salsa, green onions, and salt in a bowl. 
4. Spread a spoonful of meat mixture on the bottom of each tortilla. Roll the tortillas up and lay them in the pan.

5. Melt the butter over medium heat in a small saucepan. Add the flour and whisk until combined. Cook until it's frothy and fragrant. Add the broth and whisk. Stir until it has thickened, about 4 or 5 minutes. Remove from the heat and add the sour cream and mayonnaise. Whisk to combine. 
6. Pour the thickened broth over the enchiladas, making sure to cover all sides. Sprinkle the remaining 1 1/2 cups cheese over the top.

7. Bake for 20 minutes. Broil for 3 minutes to brown the cheese.
