Family Favorite Pancakes

Good afternoon! I have the perfect recipe for tomorrow's breakfast. My family loves these pancakes. They have just the right amount of fluff without being too high in the middle. We eat them for breakfast, after school for a snack, and for lunch as a bread substitute. You can't go wrong! Oftentimes my 9-year-old will ask to whip up a batch of these. They are so simple, anyone can do it.

A few points first.

  • Feel free to substitute whole wheat flour for all or part of the all-purpose flour. I buy wheat berries and grind them for my flour.
  • This is a perfect recipe in which to use your supply of dried milk. If you want to do that, add 1/2 cup dried milk to the dry ingredients. Then add 2 cups water instead of the liquid milk.
  • If you like super fluffy pancakes, add another teaspoon of baking powder. 


Family Favorite Pancakes


2 cups flour 
1 Tablespoon baking powder
1/2 tsp salt
2 cups milk 
2 eggs
2 Tablespoons oil

1. Mix all the dry ingredients first.
2. Add in the wet ingredients.
3. Combine well, then scoop by the 1/8 cup (we have a ladle this size) onto a hot griddle or greased pan. Cook over medium heat if on the stove. If using a griddle, keep the heat between 300 and 350 degrees. (Each griddle is different. Use your best judgment.)
4. Flip to the other side when the sides are dry and the middle has set and started to bubble. 
5. Cook for another 20 seconds or so. Remove from the heat and serve warm with your favorite toppings!

Makes about 24 pancakes.

  16. We do enjoy pancakes around here! We are down to 1 little burner, though, so no pancakes for the last several weeks. :( We use all 4 burners for the 2 griddles to make enough pancakes for our family. :) I look forward to having them again... yours look wonderful.
