Farmer's Casserole

You should have seen the look on my family's faces when I pulled this out of the oven. It was like I was the biggest celebrity ever. This casserole was devoured! I love it when that happens.

Make this for breakfast or dinner. Simple ingredients make for a delicious meal any time of day. It's perfect for those times you want to just be able to put something in the oven because it is a make-ahead dish if you want it to be. Go make this and enjoy feeling like a rock star!

Farmer's Casserole


6 small potatoes, baked, peeled, and cubed
1 pound sausage, cooked and crumbled
1/2 cup onion, diced
1/2 cup green pepper, diced (optional)
8 eggs
1 1/2 cups milk
1 1/2 cups shredded colby jack cheese or cheddar cheese
1/2 teaspoon salt
1/2 teaspoon pepper

Oven temp: 375 degrees

1. Spray a 9x13 baking dish with cooking spray. Place the cubed potatoes on the bottom. Sprinkle with the sausage, onion and green pepper.

2. In a medium bowl, beat the eggs, milk, cheese, salt, and pepper and well combined. Pour over the meat and potatoes.

3. Cover and refrigerate several hours or overnight. Remove from the refrigerator 15 minutes before baking. Or skip this step entirely and bake it as is.
4. Bake in a preheated 350 degree oven, uncovered, for 55-60 minutes or until a knife inserted near the center comes out clean. You'll know when it's not jiggly in the middle you are close to being done.
5. Serve immediately.

  4. Great photos. Reminds me of my early days as a wife. Casseroles were the going thing. I think because they were not only easy to make, but delicious and economical.

  6. Casseroles like this one are some of my favorite meals! This one sounds delicious with the green peppers. Looks like a good one to freeze in individual portions for an easy breakfast.
