30 Minute Tomato Beef Stew


Look no further for a fantastic dinner tonight. This stew is hearty, delicious, and filling. Leftovers are amazing! If you use this homemade tomato juice it will not only be good - it will be memorable!

I made this a couple nights ago. It was enjoyed by everyone. Last night we finished off the leftovers. I love tomato-based leftovers! I was the last to be served and scraped the serving bowl clean. A few minutes later my husband asked if there was any left. When I said no, I could sense the disappointment. It was beautiful!

As the title says, it takes about 30 minutes to make start to finish. What's better than a surefire winner dinner that is quick, too? Not much.

Ingredients:

2 Tablespoons oil
1 onion, diced
3 carrots, chopped
1 pound ground beef or venison
4 cups tomato juice
1 heaping teaspoon beef bouillon (Better Than Bouillon is the best)
1 tsp onion salt
1/2 tsp garlic powder
1 cup frozen corn
1 can kidney or black beans, optional

Instructions:

1. In a large pot, heat the oil. Saute the onions and carrots in the hot oil for 5 minutes. Add the beef and brown thoroughly. Drain any grease.
2. Stir in the tomato juice, bouillon, onion salt, and garlic powder. Simmer on medium low 10-15 minutes, stirring occasionally. 
3. Add the corn and beans if desired. Cook for another 5 minutes.
4. Serve hot!
