4 Star Seasoned Casserole Chicken Bacon Potato Cheese Heaven is Smiling Above heavenissmilingabove.blogspot.com


Just like the name says, this casserole has four starring foods in it: potatoes, chicken, bacon, and cheese! Seriously, you can't go wrong with that combination. This is very hearty and filling. The seasoning reminds me of Arby's or something you would get at a ball park. We are a family of mild palates so this was plenty spiced up for us. Yum! 

Give yourself some time for the flavors to marinate and then time for baking. If your family loves meat and potatoes, do them a favor and dish some of this up soon!

Let's get started.


4 Star Seasoned Casserole


8 potatoes, cubed into small dice (I used my food processor to shred them into thick fry-like pieces)
1/3 cup oil
1 Tablespoon onion powder
1 1/2 teaspoons pepper
1 1/2 teaspoons paprika
1 teaspoon salt
2 pounds chicken thighs, cut into bite-sized pieces
1/4 cup ranch dressing
2 green onions, sliced
12 ounces bacon, cooked and crumbled
2 cups shredded cheddar cheese

1. In a 9 x 13 baking dish, mix the potatoes, oil, onion powder, pepper, paprika, and salt. Make sure all the potatoes are coated. Cover the dish and marinate for one hour in the refrigerator, stirring once halfway through.
2. In a large ziploc bag or another bowl, combine the chicken, dressing, and onions. Marinate for one hour in the refrigerator, mixing or mashing once halfway through.
3. Preheat oven to 375 degrees, Fahrenheit
4. Bake potatoes for 45 minutes or until soft.
5. Meanwhile cook the chicken in a skillet until no longer pink. Keep warm.
6. When the potatoes are done, sprinkle the bacon on top. Layer the hot chicken over the bacon. Sprinkle the cheese over the chicken. Bake for 20 more minutes or until the cheese is melted. Alternatively, you can broil the cheese until nicely browned and save yourself some time since the other ingredients are already cooked through. 
7. Serve hot!
